Top speed for the CB750 is listed as 120 mph, Triumph is listed at 115 mph for the same year and handled better. A Norton is faster than a Triumph. Both are older designs that were slightly tweaked year to year rather than groundbreakers.
If it was simple speed more people would talk about Munch motorcycles which in 1968 went almost 140 mph but drove like a truck.
A precise definition isn't a useful argument but a superbike would have to include a lot of things rather than speed. The bikes we have come to consider superbikes have good braking as well as speed, sophisticated design, and decent handling. Kawasaki 900's were fast but that's 3 years later.
I think a CB750 is a pretty good choice. It was highly innovative and turned the industry in a new direction like nothing else.
